Chris, I'm cookin' too! I stole this from Tasco's post last week; Kielbasa sausage with peppers, water chestnuts, and sweet & sour sauce over rice. Dessert was poached pears with Amaretto ice cream

For Dinner Omelettes....

Mrs. ATP had the classic "Denver Omelette" (Smoked Ham,Green Peppers,Onions,Mushrooms & Chedder cheese) with Ranch Potato's
And Sourdough Toast.

For me "Omelette au Jambon et Fromage" a French classic of (Smoked Ham,Onions,Mushrooms,Herbs & Jarlsberg Swiss cheese)

mmmmm..Good movie and good food. I finally got a chance to cook! Stupid camera battery died so I have no pics (until I heat up the leftovers) but I made a curry coconut chicken dish with water chestnuts, diced jalapenos, and pinapple served with toasted pine nut cous cous and the first glass of cider of the season. Now find time this week for smoked salmon omelets with apple cider cured bacon.

Erk, sounds delicious! I think WalMart is trying to tell me I need to cook more Thai and Indian food; the WalMart across from my work is very convenient but frustrating as they seem to lack even the most basic cooking supplies, Yet they carry 4 brands of coconut milk. FOUR!!! We have about 5% combined Asian/Indian in our population and we need FOUR BRANDS OF COCOUNT MILK?! I just don't get it :lol:

Good lookin' omeletes ATP, but I'm not sure I could eat anything called "fromage", sounds like something rotten. Speaking of rotten, I pitched out my last batch of olives. They were doing a 10 day water bath but they seem to be fermenting. I'm sure that's a good thing for fromage but probably not for olives!

Tonight it's Guerro Enchiladas (guerro is a slightly derrogatory Spanish term for caucasian :D ) Shredded white chicken, sour cream, flour tortillas, Ortega chiles, green encilada sauce and PEPPER JACK CHEESE!!!

While they were baking, we heard a POP! in the oven and a error code showed up on the display. The short story is that we'll be out of a stove and oven for the next week :( How did you survive ATP? Guess I'll see what I can cook in the grill this week. Dutch oven brownies? :lol:

Boy, all that "party planning" has made me h0ngry!

I marinated the chicken overnight in Indian spices mixed into some plain yogurt, and grilled it this morning.
After I got home this evening, a fresh pack of spring roll wrappers slid out of the cupboard, and a plan was hatched...

Tandoori chicken and roasted eggplant (with cilantro, chopped Romaine and rice noodles) spring rolls with spicy peanut cardamom dippin' sauce.

Actually the dippin sauce has:

peanut butter (thin with water)
Sriracha sauce
soy sauce
hot chili oil
cardamom
garam masala
clove

Yep, no smoke nor fire - kinda boring :D Some component must have fried (electric stove).

That looks really tasty amybean. I have yet to master the art of preparing eggplant. It was the one menu item I simply could not cook right when I worked at a restaurant and haven't tried it since. Always comes out too rubbery.

Last night my beautiful wife needed a low carbohydrate dinner for a medical test today so I took a cue from ATP and made omelets - Bacon, tomatoes, sauted onions, muenster and provolone cheeses. Cooked on the side burner of the BBQ

NEWSFLASH - Giant Cephalopod Seen Swimming South! It's the Kraken Cuba Libre! Pretty good to my untrained palate :D

Tonight DiGiorno pizza on the grill, got a little toasty on the bottom :lol:

One time, on a whim, a friend made an omelette with a batch of leftover spaghetti with seafood. It was the best thing ever! Great way to cut your prep time down :wink:

Kind of like quesadillas- pretty much anything goes inside.

I can't beat Amy's omelette, that looks fantastic!

I got a few more beans from the garden and roasted a chicken on the grille.

Sidenote: Glad to see you all again also, was a long couple of days without TC. I went to Hobby Lobby and looked at supplies for making some lamps over winter.

Now that's a spread. I like the idea of rosemary in the corn!

We made chicken and dumplings in the crockpot (4 more days 'til oven repair). It really wasn't picture worthy; white chicken, white potatoes, and white dumplings - we didn't have any other veggies in the fridge.

Here's a question for you guys - what percentage of your fresh veggies do you get eating before they get thrown out? We're not very good at it, seems like we throw out about 60% because they go bad before we get around to cooking them. Lately I've been bringing the veggies home from the store and just throwing them away instead of putting them in the fridge. Cuts out the middleman :lol:

Yea,there is always a half head of lettuce or a Bell pepper gone to "science experiment" status in the crisper drawer!
It helps that I grow alot of my Veggies & Herbs though.

ATP, the Imperial Valley and neighboring Yuma Valley grow 90% of America's winter produce. I would plant a garden if the damned rabbits weren't as thick as bugs on a bumper! (Do ferrets eat rabbits?)

Wild ones do, MDM! but there are other very dangerous Ferrets like.....

I think one of those serial killer ferrets lives behind my neighbors garage. Late at night I can hear him cutting wood and the wail of his ferret victims.

Round is a shape but, so are these.

These were so freakin good. This will be a regular BBQ event.

Hey did someone call Erik to let him know we are on the way!

Well, another batch of olives crashed and burned :(

"Spanish Gypsy Olives - Just a blush of Purple - 10 day water bath, saltwater brine, limes cubes (I didn't have any lemon), cumin seeds, oregano, garlic, vinegar, olive oil. Ready in 2 weeks."

The 2 weeks was up so I cracked them open and tried a couple. They are too bitter! Uncured olives are VERY bitter, seems that I tasted them after their 10 day water bath and the bitterness was gone. Now they have a good flavor but they are just a little too bitter. I can't tell if it's from the lime peel or if it's the natural bitterness of the olives.

Then to add insult to injury, I either got food poisoning after eating them or coincidentally got the flu. I followed the recipe fully and was very careful to keep everything clean. The two other people who sampled the olives last night didn't get sick so who knows?

So far the only successful batch was the lye-cured ones that taste like canned black olices. They are OK but black olives are about the most bland olives ever created.
