I suppose you could use club soda, but it would taste different. Tonic water is sweetened a little, and also bitter (quinine). I think the bitterness may have something to do with it being so refreshing and thirst-quenching, on a blazing hot day... just like beer. Maybe if you added some kind of bitters to the soda?
Funny thing is, my wife always hated the taste of gin ("like drinking perfume"). She was shocked to discover she loves G-n-T's. Doesn't have that "gin taste", she says.
