Birdman- I've carved a bit of Eucalyptus. It's rather hard, but gets really great detail. What you've got to watch out for is that Euc has a way of cracking that makes the log unusable. If your logs are fresh, I'd store them in a cool place out of the sun so they will dry slowly. These were carved from Eucalyptus:
