It is near impossible to gauge this way.

Figure out how many you need to buy tickets and stay at your hotel to make it work and that will give you a better idea of "is it a good idea."

In the end, you can't be sure until you put it together and start selling tickets. Then, once you have it done one year, you can A) know if it was really a success and B) plan the next year based on the number of actual attendees plus 10-20%

First time is always hard to judge. But the second and third time to do the same event at the same place just gets easier and easier in terms of budgeting, etc.
